Ingredients
- 1 tbsp olive oil
- 4 onions
- 4 green peppers
- 1 can (28 oz) whole unpeeled tomatoes (or 8 whole unpeeled tomatoes)
- 1 tsp sugar
- salt and pepper to taste
- 1/4 cup rice
Instructions
- chop onions and saute in oil for a few minutes until semi-translucent
- add chopped green peppers and continue to saute for 10 minutes
- add tomatoes and cook over medium heat for 20 minutes
- add rice and cook partially covered until the liquid reduces
