Baked Sweet Potato Fries

Another great and healthy fry is baked squash fries. Peel an acorn squash, cut into 1/2 inch wedges or slices, place on olive-oiled or non-stick sprayed baking sheet, and bake at 425 for 35-40 minutes. Great flavor, closer to that of a regular french fry than a sweet potato fry.

Its a great way to avoid the nutrient-deficient french fries of today & not give them up.
